Yummer. I love this dessert, it's a fave. I wanted to order it from our local dessert place but they were out. They had it last week and this week it's off the menu. Dangit. I think it's quite easy to make oneself except for peeling the pomelo. That fruit is sturdy.
Directions:
3 cups of mango puree (use 2 to 3 fresh mangoes)
lime to taste
tiniest bit o salt
Cold water
Confectioner’s sugar to taste
1 ripe mango, cubed
Pomelo bits and chunks
Evaporated milk (or cold coconut milk)
Method:
1) In a blender, puree mangoes. Add lime, salt, evaporated milk, water and sugar to taste.
2) Cool and chill in the refrigerator for a few hours until ready to serve.
3) To serve: Scoop some mango puree into a serving bowl, add pomelo, fresh mango cubes and a drizzle of evaporated milk to taste! YUM!
